Vinification

The harvest is done by hand after the grapes have reached full ripeness. This is followed by destemming and fermentation in tanks using the red wine vinification technique for 15 days. The wine is aged on the lees for 2 months and decanted into French oak barrels for 1 year. Bottling without filtration.
