Privately owned 45-year-old vineyard in the area of “Trilagkada” in the municipality of Maries of Zakynthos. Red sand and clay soil with presence of stones, altitude 350m.

Microclimate

The vineyard is located east of the community of Maries of Zakynthos, facing south. The microclimate of the area is characterised by mild temperatures in the winter and afternoon breezes and cool nights during the summer months.

Characteristics:

It incorporates the dynamic character of the unique Avgoustiatis variety in a concentrated sweet version made from grapes grown on decades-old vines (planted in 1986) and dried in the sun for ten days. It reveals a complex aromatic bouquet of sweet black fruits and spices like licorice, cedar seed, and star anise. Its balanced sweetness concludes with a long velvety aftertaste.

Food Pairing:

Ideally accompanies: Chocolate and wild berry-based desserts, black forest cake, and blue cheeses (like Roquefort, Stilton, or Gorgonzola). Served at 11-13ºC (it’s recommended to let it breathe for an hour).

Vinification

The harvest is done by hand after the grapes have reached full ripeness. They are then exposed to the sun for 10 days. This is followed by destemming and fermentation in tanks using the red wine vinification technique at 15 degrees Celsius for 30 days. The wine is aged on the lees for 2 months. Bottling without filtration.
