The vineyard is located north of the municipality of Maries of Zakynthos, facing southwest. The microclimate of the region is characterised by mild winters and cool summers.

Characteristics:

It has a deep lemon-yellow color and blossom, sugared citrus, and yellow fruit aromas with additional traces of spices and herbs. It’s vigorous and full in the mouth, offering richness, fattiness, and structure. Its lively acidity emphasizes the fruit, creating balance and fullness. Its aftertaste is fine in length and finishes tannic and mineral. This wine also boasts excellent cellaring potential, promising to develop further complexity and elegance with age.

Food Pairing:

Ideally accompanies: grilled fatty fish, rich pasta sauces, white meat, and pork kontosouvli (skewered and spit roast). Served at 10-12°C.

Vinification

The harvest is done by hand after the grapes have reached maturity. They remain in the refrigerator for 24 hours at 10 degrees Celsius, followed by destemming and pre-fermentation cold maceration for 12 hours. Static racking for 72 hours, decanting into tanks and fermentation. Bâtonnage for 2 months in fine lees. No filtration processes used.
