Microclimate

The vineyard is located northwest of the municipality of Maries of Zakynthos, facing north. The microclimate of the region is characterised by mild winters and cool summers.

Characteristics:

It’s made from an age-old Zakynthian variety grown in some of the highest vineyards on the island at 600 m. It’s exceptionally strong and powerful with a medium golden color and spicy, floral, sugared yellow fruit, and cream aromas. Its initial dynamic palate is followed by a moderate volume where citrus fruit and yellow plums prevail. Its high acidity prepares the mouth for a long aftertaste with peppery, piquant, and botanical traces. Aging for 3 months in French oak barrels.

Food Pairing:

Ideally accompanies: Exuberant dishes, seafood, grilled fish, piquant cheeses, gnocchi with mushrooms, pork, lamb, and goat meat. Served at 10-12 °C

Vinification

The harvest is done by hand after the grapes have reached maturity. They remain in the refrigerator for 24 hours at 10 degrees Celsius, followed by destemming and pre-fermentation cold maceration for 12 hours. Mild pressures, fermentation at 17 degrees without vaccination. There is no sedimentation, after fermentation, for 3 months of batonage. 5 months the wine lees remain, where static racking takes place. After 3 months in French oak barrels. No filters are used.
