Characteristics:

It’s an excellent manifestation of its namesake Zakynthian variety, made of grapes from a semi-mountainous indigenous vineyard planted in 1996. Not using oak barrels allows it to reveal a dense aromatic bouquet of black fruits, sour cherry, and fresh herbs from its typical deep red background. In the mouth, it has a powerful structure with a fleshy, smooth taste.

Food Pairing:

Ideally accompanies: Meatballs with tomato sauce, liver, fillet, eggplants imam bayildi, and creamy cheeses (like Brie and Camembert). Served at 15-17ºC.

Vinification

The harvest is done by hand after the grapes have reached full ripeness. This is followed by destemming and fermentation in tanks using the red wine vinification technique for 15 days. The wine is aged on the lees for 2 months and bottled without filtration.
