Characteristics:

It’s made exclusively from Avgoustiatis grapes grown in a 30-year-old indigenous vineyard at 450 m. Crushing the grapes immediately after harvesting results in its subtle rose color and greengage plum, cherry, and green apple aromas. It has a generous body and spectacular acidity that provides ample freshness and a persistent finish.

Food Pairing:

Ideally accompanies: Green salads with pomegranate, tomato patties, cheese rolls, shrimp saganaki, and fatty fish (like salmon and dusky grouper). Served at 9-11ºC

Vinification

The harvest is done by hand after the grapes have reached a stage of mild ripening. They remain in the refrigerator for 24 hours at 10 degrees Celsius, followed by destemming. Light pressing of the grapes, static racking for 72 hours, decanting into tanks and fermentation. Bâtonnage for 2 months in fine lees. No filtration processes used
