The vineyard is located at the foothills of the peak of the mountain “Vrachionas” of Zakynthos facing south, characterised by cool summers.

Characteristics:

It has a medium lemon-yellow color and yellow fruit and white and purple flower aromas with spicy and peppery notes. It leaves a cooling sensation in the mouth and provides a pleasant energy from the acidity balancing the fruits’ sweetness. Its full palate leads to a prolonged piquant and botanical aftertaste.

Food Pairing:

Ideally accompanies: fish, seafood, rotisserie dishes, chicken sofrito, and cabbage rolls. Served at 14°C.

Vinification

The harvest is done by hand after the grapes have reached maturity.They remain in the refrigerator for 24 hours at 10 degrees Celsius, followed by destemming and pre-fermentation cold maceration for 12 hours. Static racking for 72 hours, decanting into tanks and fermentation. Bâtonnage for 2 months in fine lees. No filtration processes used.
